Broccoli - Cheese Casserole

Ok folks (Steve:), here it is. I made this at Thanksgiving, which was about a week after I started 'The Metabolism Miracle'. I am not a fan of Green Bean Casserole, so I knew I would need something, since I wouldn't be eating potatoes, squash, or the infamous Green Bean Casserole. This is awesome~!~~! (more on Thanksgiving later)

Broccoli-Cheese Casserole  (this is a no-carb recipe)
This recipe is out of 'The Metalolism Miracle', Dianne Kress, RD, CDE; Da Capo Lifelong, 2009.
Serves 4

2 cups reduced-fat shredded Cheddar cheese
2 cups sliced mushrooms
1 cup chopped scallions
1/2 cup light cream
1/4 cup olive oil
1/2 teaspoon salt
2 cups chopped fresh broccoli
Cooking oil spray

Preheat oven to 350 degrees.
In a medium saucepan over low heat, combine all the ingredients.
Cook for 5 minutes, stirring constantly.
Coat a 2-quart casserole dish with cooking oil spray. When the cheese melts, spoon the mixture into the casserole.
Bake for 30 minutes.
Serve warm.
